2. What should I teach?

This is such an exciting question. I'm going to answer it with several more questions. What are your hobbies? What would you be excited to learn more about? What are your kids interested in? What would they like to learn more about? What do you think they need to learn more about?

I want you to be excited about teaching your class, so pick something you are exciting about, and offer to teach. You will be a better teacher if you are excited, and the kids will be inspired, because you are inspiring.
